Levantine Hill Sauvignon Blanc Semillon is two thirds Sauvignon Blanc and one third Semillon, all handpicked from estate vineyards in the Yarra Valley.
Whole bunch pressed juice is cool settled overnight. The Sauvignon Blanc component is lightly racked to French oak barrels for fermentation. Most of the Semillon ferments in stainless steel, the remainder in a seasoned oak foudre, or 'vat'.
Select barrels are allowed to complete malolactic fermentation to add richer, softer characters to the final wine. All components mature for seven months prior to blending.
A pale lemon hue, Levantine Hill Sauvignon Blanc Semillon has persistent tangy flavours, a fine drive of acidity and a textural finish. Cellaring potential is eight years.
